Crunchy Cookies are a timeless treat that perfectly blend the richness of margarine with the nuttiness of wholemeal flour. Ingredients

  • 100 gms margarine

  • 75 gms caster sugar

  • 200 gms wholemeal flour

  • 1 egg

  • 1 tsp baking powder

  • 3-4 glacé cherries

  • A few drops of almond essence

Directions

  • Cream the margarine and caster sugar together in a mixing bowl until light and fluffy.
  • Beat in the egg and a few drops of almond essence, mixing well to combine.
  • Sift together the whole meal flour and baking powder. Gradually work the dry mixture into the creamed ingredients to form a soft dough.
  • Using a teaspoon, scoop the dough and roll it into small balls. If the mixture is too sticky, rinse your hands with cold water and leave them slightly wet while rolling.
  • Place the cookie balls on a greased baking sheet, spaced about 1 ½” to 2” apart. Press a small piece of glacé cherry into the centre of each cookie.
  • Preheat the oven to 180°C and bake for 25-30 minutes or until the cookies are golden brown.
  • Carefully transfer the cookies to a wire tray while still warm and allow them to cool completely. Enjoy with a cup of tea or coffee!
