Ingredients

  • 150 gms flour

  • 40 gms powdered sugar

  • 60 gms butter

  • 2 tbsp honey

  • 1 tbsp ginger juice

  • 1 tsp ginger powder

  • 1/2 tsp spice powder

  • 1/4 tsp baking powder

  • 1/4 tsp caramel colour (optional)

  • Butter icing or royal icing, for decoration (optional)

  • A little granulated sugar, for sprinkling (optional)

Directions

  • Cream the butter and powdered sugar until light and fluffy.
  • Stir in honey, ginger juice, ginger powder, spice powder, baking powder, and caramel colour. Mix well.
  • Add the flour gradually and combine into a soft dough. Chill in the refrigerator for 5-10 minutes.
  • Roll the dough between two sheets of buttered parchment paper until ¼ inch thick.
  • Cut with a Ginger Man cookie cutter or desired shapes.
  • Transfer onto a greased tray and prick with a fork.
  • Bake at 160°C for 15-20 minutes, until golden brown on the edges.
  • Cool on a wire rack. Sprinkle with sugar if desired and decorate with icing once cooled.
