Ingredients

  • 170 gms dark chocolate (60–70% cocoa), chopped

  • 115 gms unsalted butter

  • 2 large eggs

  • 2 large egg yolks

  • 50 gms caster sugar

  • 1 tsp vanilla extract

  • 30 gms all-purpose flour

  • A pinch of salt

  • Butter and cocoa powder (for greasing ramekins)

  • Icing sugar or berries, for garnish (optional)

Directions

  • Preheat oven to 220°C (425°F).
  • Grease 4 ramekins with butter and dust with cocoa powder.
  • In a heatproof bowl, melt the chocolate and butter together over a double boiler or in the microwave. Stir until smooth.
  • In a separate bowl, whisk together eggs, yolks, sugar, and vanilla until thick and pale.
  • Gently fold the melted chocolate mixture into the egg mixture.
  • Add flour and a pinch of salt; mix until just combined. Pour batter evenly into prepared ramekins.
  • Bake for 10–12 minutes until the edges are set but the centres are soft.
  • Let rest for 1 minute, then invert each ramekin onto a plate.
