Nasi Goreng

Ingredients

  • 8 tbsp sesame oil

  • 6 shallots, peeled, halved lengthwise, and sliced (or substitute with spring onions)

  • 8 cloves garlic, peeled and sliced

  • 200 gms chicken meat, sliced

  • 150 gms medium shrimp, peeled

  • ¼ small white cabbage, shredded

  • ½ cup Sambal Tomat

  • 4 eggs, beaten

  • 800 gms cooked rice, cold

  • 1 tbsp sliced bird’s-eye chillies or hot green chillies

  • Salt to taste

  • For garnishing:
  • Fried shallots or chopped spring onion stalks

Directions

  • Heat sesame oil in a wok or heavy frying pan until very hot.
  • Add sliced shallots and garlic; fry for about 1 minute until golden yellow.
  • Add chicken and shrimp, stir-fry for another minute.
  • Stir in the Sambal Tomat and mix well with the meat.
  • Pour in the beaten eggs and stir quickly for about 30 seconds to scramble.
  • Increase to very high and add the cold cooked rice and salt.
  • Stir-fry continuously for 3 minutes until rice is heated through and well mixed.
  • Add sliced chillies, toss thoroughly, and remove from the heat.
  • Serve hot, garnished with fried shallots or chopped spring onion stalks.
