170 gms dark chocolate (60–70% cocoa), chopped
115 gms unsalted butter
2 large eggs
2 large egg yolks
50 gms caster sugar
1 tsp vanilla extract
30 gms all-purpose flour
A pinch of salt
Butter and cocoa powder (for greasing ramekins)
Icing sugar or berries, for garnish (optional)
Directions
- Preheat oven to 220°C (425°F).
- Grease 4 ramekins with butter and dust with cocoa powder.
- In a heatproof bowl, melt the chocolate and butter together over a double boiler or in the microwave. Stir until smooth.
- In a separate bowl, whisk together eggs, yolks, sugar, and vanilla until thick and pale.
- Gently fold the melted chocolate mixture into the egg mixture.
- Add flour and a pinch of salt; mix until just combined. Pour batter evenly into prepared ramekins.
- Bake for 10–12 minutes until the edges are set but the centres are soft.
- Let rest for 1 minute, then invert each ramekin onto a plate.
